Ingredients

  • 3/4 c. all-purpose flour
  • 1 t. baking powder
  • 1/2 t. salt
  • 3-oz. pkg. cook & serve vanilla pudding mix
  • 3 T. butter, softened
  • 1 egg
  • 1/2 c. milk
  • 16-oz. can sliced peaches, drained and 5 T. juice reserved
  • 8-oz. pkg. cream cheese, softened
  • 1/2 c. sugar
  • Garnish: cinnamon-sugar to taste

Step 1

Combine first 7 ingredients in a large bowl; beat with an electric mixer for 2 minutes. Pour into a greased 9" pie plate. Arrange peach slices on top; set aside. Beat together cream cheese, sugar and reserved juice for 2 minutes. Spoon over peaches; sprinkle with cinnamon-sugar. Bake at 350 degrees for 30 minutes. Serves 8
