Ingredients
- 4 - 6 boneless skinless chicken breasts, rinsed and patted fry
- Garlic salt
- Pepper
- 1 cup uncooked long grain rice
- 1 can chicken broth
- 1 cup mild salsa
- 1 (8 ounce) can tomato sauce
- 1/2 cup diced onion
- 1/2 cup diced green peppers
- 1/2 teaspoon garlic powder
- 1/2 cup shredded Monterey Jack cheese
- 1/2 cup shredded Cheddar cheese

Preparation
Step 1
Sprinkle both sides of chicken with garlic, salt and pepper. Spread rice in bottom of rectangular baking pan and arrange chicken breasts on top of rice.
In a small bowl, stir together chicken broth, salsa, tomato sauce, onions, pepper and garlic powder. Pour sauce over chicken. Cover dish and bake at 350ºF. for 1 hour.
Uncover and sprinkle cheese on top. Bake 5 min. longer.
