Ingredients
- Metric Ingredient Imperial
- 750 g medium zucchini, grated 1 1/2 lb
- 10 ml salt 2 tsp
- 1 large carrot, grated 1
- 1 red pepper, julienned 1
- 1 red onion, thinly sliced 1
- 1 stalk celery, julienned 1
- 30 ml each fresh parsley and dill, chopped 2 tbsp
- DRESSING -
- 175 ml mayonnaise 3/4 cup
- 30 ml dijon mustard 2 tbsp
- 30 ml red wine vinegar 2 tbsp
- 15 ml olive oil 1 tbsp
- 15 ml liquid honey 1 tbsp
- 1 ml pepper 1/4 tsp

Preparation
Step 1
Combine zucchini and salt; toss well. Place in colandar; let stand for 30 minutes. Rinse under cold water; drain and squeeze out excess moisture. Place zucchini in bowl and add carrot, pepper, onion and celery; toss well. Sprinkle with parsley and dill.
DRESSING: Combine mayonnaise, mustard, vinegar, oil, honey and pepper; stir into zucchini mixture. Taste and adjust seasoning if necessary.
