Ingredients
- Graham cracker crust, baked
- or cookie crust, which is really delicious
- 1/2 cup butter
- 1 cup sifted flour
- 1/4 cup sugar
- dash salt
- 1 egg yolk
- chill one hour in fridge
- bake 400 9 to 12 minutes

- 2 1/2 lbs cream cheese
- 6 eggs
- 1 3/4 cup sugar
- 1/2 cup heavy cream
- 2 tbsp flour
- 1/4 tsp salt
- 1 tsp vanilla

Step 1
Beat cheese till fluffy. 10 minutes. Beat the entire 10 minutes and cake will not crack. Add sugar, flour, salt and vanilla, beat well. Add eggs one at a time. Add cream. Bate 475 for 10 minutes. Turn oven down to 225 and cook for 1 hour.
Turn off heat, leave in oven 5 to 10 minutes. Cake may be jiggly. Cool overnight in fridge.
