Ingredients

  • 1 skinless chicken breast per person.
  • 2 McCormick's chili mix one regular, one hot.
  • 2 cans chili beans - (drain) Canned pinto beans are also a good addition if you want more beans.
  • 1 can red kidney beans (drain).
  • 1 medium white onion, chopped or thin sliced.
  • 1 can Mexican style chopped tomatoes.
  • 1 can regular chopped tomatoes.
  • 1 small can tomato sauce. Use two cans if you like more tomato taste.
  • (Catsup makes a good tomato sauce, with a little different taste.)

Step 1

Cut all fat from chicken, dice and put in pot and braise in oil until no pink. Drain. Add ingredients together,
putting in chili mix last. Add water to desired consistency. Cook until chicken is well done, a minimum on medium heat of 30 minutes. That makes sure the onions
and chicken are done. An hour or more is better. If it gets too thick, add water. To vary the taste or to make a larger quantity, you can add more beans, or if it's too hot, add more tomatoes or beans. Add chili powder or black pepper to make it hotter. Consistency should be fairly thick.
