Chicken Adobo

You can substitute chicken with pork shoulder meat or a combination of both.

Ingredients
- 1 whole chicken cut up
- 1 cup soy sauce
- 1 cup apple cider vinegar 1 teaspoon lemon juice
- 1/4 cup water
- 1 tablespoon whole pepper corns
- 3-4 whole bay leaves, dried
- 1/4 cup chopped red or yellow bell peppers or 1 whole jalapeno
- 1 medium onion, sliced
- 5 garlic cloves, crushed
- 1/2 teaspoon black pepper

Step 1
In a large pot, place the cut up chicken with the rest of the ingredients.' Bring to a boil, reduce heat to medium and simmer for 45 minutes, cover ing the pot half way with the lid. Stir occasionally until sauce is thickened or reduced by half.
Serve hot with steamed rice.
