Ingredients

  • 3 tablespoons butter, divided
  • 10 ounces fresh spinach, stems trimmed
  • 1 medium onion, chopped
  • 2 cups mushrooms, sliced
  • 2 tablespoons flour
  • 2 tablespoons milk
  • 1/2 cup vegetable broth
  • 1 1/2 cups soy sausage, chopped
  • Salt and pepper to taste
  • 6 eggs
  • 1/3 cup Romano cheese, grated

Preparation

Step 1

Preheat oven to 400 degrees.

Melt 1 tablespoon of the butter in a skillet over medium heat. Add spinach and stir until wilted, about 3 minutes. Arrange spinach in the bottom of a 9 x 13 inch baking dish. Set aside.

Melt remaining butter in a large saucepan over medium heat. Add onion and sauté until softened, about 2 minutes.

Add mushrooms and sauté another 2 minutes.

Add flour and milk and sauté another minute.

Add vegetable broth and simmer until sauce thickens, whisking constantly for 3 to 5 minutes.

Add in sausage. Season with salt and pepper to taste.

Crack eggs over spinach, spacing evenly. Spoon sausage mixture around eggs, leaving yolks exposed. Sprinkle cheese over the top. Bake until eggs are just set, about 15 minutes.

SERVING SUGGESTIONS: Serve with more spinach in a salad! Spinach, strawberries, red onion and a poppy seed dressing would rock!
