Ingredients

- 500 g fish fillets, patted dry 1 lb
- 50 ml light mayonnaise 1/4 cup
- 50 ml parmesan cheese, grated 1/4 cup
- 30 ml green onions, chopped 2 tbsp
- 15 ml red bell pepper, chopped 1 tbsp
- cayenne pepper to taste -
- 125 ml dry bread crumbs 1/2 cup
- 2 ml dried basil 1/2 tsp
- pepper to taste -

Preparation
Step 1
Place fish fillets in a single layer in bottom of greased 11 x 7 inch (2 L) baking dish. Set aside.
In a small bowl; stir together mayonnaise, cheese, onions, pepper and cayenne. Spread mixture evenly over fish.
In separate bowl; combine bread crumbs, basil and pepper; sprinkle over top of fish. Bake in preheated 400 F (200 C) oven for 10 to 12 minutes or until fish is opaque and flakes easily with fork.
