Ingredients

  • 1 lb. turkey sausage or low-fat sausage
  • 1 large onion, chopped
  • 1 lb. fresh mushrooms, sliced
  • 2 (6oz.) pkgs long grain & wild rice mix
  • 1-1/2 lbs (4 cups) cooked, diced turkey breasts or thighs
  • 1 (14oz.) can artichoke hearts, quartered
  • 1 / cup chopped green onions (scallions)

Preparation

Step 1

Cut sausage into pieces & brown in large pot sprayed with PAM. Add onions & mushrooms, cooking until tender. Drain off excess grease. Add wild rice, seasoning packet & water to sausage mixture and cook according to package directions. Add turkey & artichoke hearts, tossing gently. Top with green onions.
