  • 1 lb. boneless lean pork shoulder butt
  • 2 cloves garlic, thinly sliced
  • 2 Tbsp. lime juice
  • 1 Tbsp. dark rum
  • 1 1/2 tea. maple syrup
  • 1/8 tea. cayenne

Step 1

With a paring knife, pierce the pork all over. Insert garlic slices into the gashes, then rub the lime juice onto the pork. Combine the rum, maple syrup and cayenne pepper in a bowl, add the pork and coat well. Cover and refrigerate about 8 hours. Turn the pork occasionally in the marinade.

Preheat oven to 425 degrees. Line a shallow roasting pan with foil Lift the pork from the marinade and place on a rack over the foil. Roast uncovered and brush often with the marinade for 20 minutes. Lower the heat to 350 degrees and roast another 20 minutes, continuing to brush often with the remaining marinade.

Let the roast stand for 10 minute at room temperature before slicing.
