- 2 cups oreo cookies, center filling removed (or 1 store-bought oreo cookie pie shell)
- 2 cups whipped cream (homemade or store-bought), plus extra for garnish
- 1 (7 oz.) jar marshmallow cream fluff
- 2 tablespoons unsalted butter, melted
- 1 teaspoon mint extract
- 3-5 drops green food coloring
- chocolate shavings, optional

Directions
1.If making your pie shell at home, place oreo cookies in food processor, drizzle in melted butter and pulse until coarsely ground.
Note: if you don’t have a food processor, place them in a large, re-sealable bag and use a rolling pin or heavy object to break them into small pieces.
2.Transfer ground cookies to pie dish and firmly mold them to form a pie shell.
3.Place marshmallow fluff in a large bowl or mixer and pour in mint extract and green food coloring to achieve desired color. Mix until smooth.
4.Once fully incorporated and smooth, gently fold in whipped cream until just combined.
5.Pour marshmallow mixture into pie shell and carefully smooth it out with a rubber spatula.
6.Refrigerate at least 2 hours before serving, then garnish with whipped cream and chocolate shavings.
