Ingredients
- 2 tablespoons Vegetabke or Olive Oil
- 800 g Beef Casserole Steak, cubes
- 2 small Brown Onions, chopped
- 1 large Red Capsicum, chopped
- 2 cloves Garlic, crushed
- 2 teaspoons Ground Coriander
- 2 teaspoons Ground Cumin
- 1/4 teaspoon Chilli Powder
- 2 tablespoons Tomato Paste
- 810 g can Whole Peeled Tomatoes
- 425 g can Red Kidney Beans
- Serve with Rice

Preparation
Step 1
Heat half the oil in a large frying pan over moderate heat. Cook beef in batches, for 2-3 mins or until seared. Transfer to plate.
Add remaining oil to pan. Cook and stir onion for 5 mins. Add capsicum and garlic and stir for 2 mins. Add spices; cook and stir fragrant.
Stir in beef, tomato paste, tomato and 1/3 cup water. Bring to boil. Reduce heat. Simmer covered for 1 1/2 hours or until beef is tender. Stir in beans. Cook and stir for 5 mins.
Serve with rice, sour cream and coriander.
