Ingredients
- 1 lb rhubarb, cut into 3/4 inch pieces, about 4 cups
- Red food coloring
- 1 cup sugar
- 1 1/4 cup flour, separated
- 1 tsp cinnamon
- 1 cup brown sugar
- 1/2 cup oats
- 1/2 cup butter (1 stick), melted but not hot
- 1/2 cup walnuts (or more)

Preparation
Step 1
Preheat oven to 375.
Note: If rhubarb is frozen, thaw and do not drain. If fresh, you may need to add up to 1/2 cup water.
In large bowl combine rhubarb with sugar, 1/4 cup flour and cinnamon. Transfer to an 8x8 pan.
In another bowl combine remaining cup of flour, brown sugar, oats, and butter and mix well. Add nuts.
Sprinkle over rhubarb mixture and bake for 35 minutes until topping is golden brown and rhubarb is tender.
