Ingredients
- 2 15-oz. cans chickpeas, rinsed and dried
- 1/4 cup olive oil
- 1 Tbsp. hot curry powder
- 1/4 tsp. salt

Step 1
Preheat oven to 400 degrees. Line 2 baking sheets with parchment paper.
In large mixing bowl, combine all ingredients. Mix well to coat the chickpeas evenly.
Divide the chickpeas evenly on the two baking sheets, and roast for 40 minutes, rotating the baking sheets after 20 minutes. Serve immediately, or let cool completely before storing in a resealable container.
