Ingredients
- 1 pound boneless shoulder, cut into cubes
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- 1/2 teaspoon dried oregano
- 1 1/2 teaspoons salt
- 1/4 teaspoon pepper
- 1 medium green pepper, cubed
- 1 medium onion, cubed
- 1 cup cubed eggplant

Preparation
Step 1
Marinate beef in lemon juice, olive oil, oregano, salt, and pepper for at least 6 hours. Thread onto skewers.
Thread vegetables onto skewers (each skewer should contain all of the same kind of vegetable).
Grill or broil meat and vegetables 3 inches from heat for 5 minutes. Turn and brush with marinade. Grill or broil 5 minutes longer.
