Ingredients

  • 1 lb boneless chicken breasts
  • 1 can diced tomatoes
  • 1/2 c chunky salsa
  • 1 c enchilada sauce
  • 1 medium chopped onion
  • 1 can black beans, drained
  • 2 cloves garlic
  • 4 c chicken broth
  • 2 t cumin
  • 1 t chili powder
  • 1 T Lemon Juice
  • 1 bay leaf
  • 10 oz frozen corn optional

Preparation

Step 1

Set crock pot to high heat
Add raw chopped chicken (or you can shred once fully cooked), chopped onion, and broth to crockpot. Stir.
Add remaining ingredients and set crock pot to low.
Cook on low for 6-9 hours.
top soup with sour cream, cilantro, avocado,
serve with tortilla chips
