Lemon Tarragon Asparagus

Ingredients

  • 1/2 lb asparagus, trimmed
  • 1/8 tsp lemon rind
  • 1/2 TBS lemon juice
  • 1 tsp fresh tarragon, chopped
  • 1 clove garlic, minced
  • 1/4 tsp shallot, minced
  • 1/4 tsp Dijon mustard
  • 2 tsp olive oil
  • Kosher salt and pepper to taste

Preparation

Step 1

1. Cook asparagus in boiling water 2 minutes or until crisp-tender. (Alternatively, steam for 5-6 minutes.)

2. In a small bowl, whisk lemon rind, lemon juice, tarragon, garlic, shallot, mustard, salt, pepper, and olive oil.

3. Drizzle tarragon mixture over asparagus; toss gently to coat.

Makes 2 servings. Each serving = 1 Weight Watchers point.
