Ingredients

  • 2 pounds meaty chicken pieces
  • salt and pepper, to taste
  • paprika, to taste
  • 2 tablespoons olive oil
  • 1 cup chopped onions
  • 1 cup chopped green bell peppers
  • 2 cloves garlic, crushed
  • 1 cup uncooked rice
  • 1/4 teaspoon powdered saffron
  • 2 teaspoons capers
  • 2 cups chicken broth
  • 1 cup canned or frozen peas
  • 8 to 10 green olives, sliced

Preparation

Step 1

Season chicken with salt, pepper, & paprika. Brown in olive oil.
Remove from pan. Add onions, green peppers, and garlic.
Cook until tender crisp. Spoon into greased 2 1/2 qt. casserole.
Add rice, saffron, capers and broth. Arrange chicken on top.
Cover; bake at 400 degrees for 25 minutes. Add peas and olives.
Continue cooking 15 minutes longer.
