Ingredients

  • 1 head romaine lettuce, outer leaves removed, washed, and chopped
  • 4 TBS sliced black olives
  • 1 small tomato, diced
  • 1 oz finely shredded Mexican blend cheese (about 1/3 cup)
  • 4 TBS Catalina dressing (e.g., Kraft)
  • 1.5 oz Doritos chips (about 16-17 chips)

Step 1

1. Place Doritos chips in a zip-top plastic bag; seal bag. Crush with hands until chips are in small pieces. Set aside.

2. Place chopped romaine lettuce in large bowl. Add black olives and tomato. Drizzle Catalina dressing over. Sprinkle cheese on top. Toss thoroughly until lettuce is well-coated.

3. Right before serving, sprinkle Doritos pieces over, and toss again. Divide into 2 bowls and serve immediately.

Makes 2 servings. Each serving = 9 Weight Watchers points.
