- 1 pound bacon
- (Use Center Cut bacon to reduce fat)
- 1 ( 14 ounce) package smoked cocktail sausages
- 1 cup brown sugar

Preparation
Step 1
1. Preheat oven to 350 degrees. Line a large rimmed baking sheet with foil.
2. Cut bacon slices crosswide into thirds, and wrap each third around a sausage. Skewer wrapped sausages individually on toothpicks, or put several on a long skewer, leaving room between sausages. Arrange on baking sheet and sprinkle with brown sugar, pressing onto sausages.
3. Bake, turning sausages over after 30 minutes, until bacon looks crisp and sugar is melted, about 1 hour. Transfer sausages to platter. (Bacon and sugar will continue to crisp as sausages cool)
Note: I found that the bacon crisps better under the broiler. After cooking for 30 minutes in the oven, turn on the broiler and broil smokies, tuning once, until bacon is crisp, 2 to 3 minutes on each side. If there is excess fat, brush it over the sausages and drain off the rest from the pan before broiling).
Note: To make ahead, bake and refrigerate. Warm at 350 degrees for 5 - 7 minutes.
