Ingredients
- 2 cans(14.5 oz each) low-sodium chicken or vegetable broth
- 1 can(15 oz) red kidney beans, rinsed and drained
- 1 can(15 oz) cannellini beans, rinsed and drained
- 2 cans(14.5 oz each) diced tomatoes
- 6 carrots, thinly sliced
- 1 bunch scallions, thinly sliced
- 3/4 tsp dried Italian seasoning
- 1 pkg(12 oz) rotini pasta
- 1 pkg(10 oz) frozen spinach, thawed and squeezed dry

Preparation
Step 1
1. Place broth, beans, tomatoes, carrots, scallions, and Italian seasoning in 4-quart or larger slow cooker. Stir to combine.
2. Cover. Cook on low 6 to 8 hours.
3. Prepare pasta per package directions. Add pasta and spinach to cooker and stir to combine. Cover. Cook 15 to 20 more minutes, or until heated through.
