Ingredients
- For the lemon cream:
- Start with a white cake recipe of your choice, or even a boxed mix if you prefer. I used this recipe baked in 2 layers.
- 8 oz. cream cheese(softened)
- 2 cups powdered sugar
- 3 TBLSP.lemon juice
- 1 Tablespoon lemon zest
- 1 cup heavy cream

Preparation
Step 1
Combine cream cheese, powdered sugar, lemon juice and lemon zest until smooth, using electric mixer or your kitchen aid.
In a separate bowl whip the cream using your electric mixer or kitchen aid until it forms stiff peaks (it sometimes helps to chill your bowl and beaters for 10 minutes before mixing)
Fold whipped cream into cream cheese/lemon mixture.Spread a nice layer of the cream between your cake layers, using the remaining amount to frost your cake. Feel free to add raspberries to the center layer, since the flavor of raspberry and lemon pair nicely, or add to the top of cake as pictured.
