Ingredients

  • 1/4 cup Spanish olive oil
  • 2 cloves garlic
  • 1 small Spanish onion
  • 1 green pepper
  • 1 pound peeled raw shrimp
  • 3/4 cup whole tomatoes
  • 1 pinch saffron
  • 1 Tablespoon salt (??)
  • 2 cups seafood broth or water
  • 1 cup yellow rice (Valencia rice)
  • 1 small jar pimentos, optional
  • 1/2 cup tiny green peas, optional
  • Parsley

Preparation

Step 1

Heat olive oil, saute chopped garlic, onion and green pepper. When half done, add raw shrimp. When shrimp turn pink, add tomatoes, saffron, salt and broth or water. When mixture starts boiling, add 1 cup rice. Bake in oven 15 minutes at 350 degrees. Garnish with peas, pimiento and parsley leaves.
