Spice Encrusted Bass Fillets

The skin of the fish turns crispy while protecting the flesh.Make sure the fish pieces are of equal thickness so they will cook in the same amount of time.

Ingredients
- 1 tbsp.(15 ml) mustard seeds
- 1 tbsp.(15 ml) coriander seed
- 1 star anise
- 11/2 tsp.(7 ml)kosher salt
- 1 tbsp.(15 ml) honey
- 1 tsp.(15 ml) Dijon mustard
- four 6 oz sea or striped bass fillets, with skin
- 1 tbsp.( 15 ml) vegetable oil

Preparation
Step 1
In a mortar,crush the mustard,coriander seeds and star anise using a pestle.Stir in the salt, honey and mustard. Mix well
Brush the skin of the fillets with the oil and then place them on a plate,skin-side down.Top each fillet with the spice mixture.
Preheat the grill on medium. Then oil the grill.Place the fillets on the grill skin-side down.Cover and cook for 5 to 10 minutes or until cooked through.
