Ingredients
- 1/2 clove garlic peeled
- 1 small shallot bulb peeled
- 1/4 teaspoon salt
- 1 -2 serrano chilis coarsely chopped
- 1 teasoon sugar
- 1/4 cup rice wine vinegar
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- juice 1 lime
- 1/8 cup cilantro
- 1 tablespoons vegetable oil
- 1-10 oz chicken, cooked and shredded
- 1 large carrot julienned
- 1 red onion sliced thin, rinse briefly in hot and then cold water
- 12 oz cabbagein 1/2 in slices
- 1-2 scallions finely sliced

Preparation
Step 1
Puree garlic, shallot salt and chili.
Mix with sugar, vinegar, sauces, lime juice and herbs. Let sit a few minutes.
Toss rest of ingredients with dressing.
Garnish with scallions.
