  • 1 can (15 oz) black eyed peas, drained
  • 1 can (11 oz) white shoe peg corn,
  • drained
  • 1/2 cup chopped tomato
  • 2/3 cup chopped green onion
  • 2/3 cup chopped cilantro
  • 2 diced avacados
  • Dressing;
  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 cloves garlic
  • 1 t cumin
  • salt and pepper
