Cranberry-Apple Corn Bread Stuffing

Tried this 2008-2009. Good but open to a new stuffing for 2010.

Ingredients
- 1/2 cup butter
- 3 med. celery stalks with leaves, chopped
- 1 cup chopped yellow onion
- 6 cups corn bread stuffing mix ( two 8 oz packages)
- 5 cups dry wheat bread cubes
- (Top has them by the bag)
- 2 cups chopped unpeeled granny smith apples
- 1 cup dried cranberries, cherries or raisins
- 2 tbspn snipped fresh sage leaves
- 1 tbpsn fresh thyme leaves
- 1/2 tspn salt
- 1/2 tspn pepper
- 3 1/4 cups chicken broth

Preparation
Step 1
In a lg. dutch oven, melt butter over med. heat. Cook and stir celery and onion in hot butter about 5 mins. or until tender. Remove from heat
Stir corn bread, bread cubes, apples, cranberries, sage, thyme, salt and pepper into onion mixture. Drizzle with enough broth to moisten , tossing lightly to combine.
Spoon stuffing into a 3 qt. baking dish (13x9x2 inch) Bake, covered, in a 325F for 35 mins. Uncover;bake for 15-20 mins. more until heated through and to desired moistness.
