Ingredients

  • 1 C mixed parsley, chives, and tarragon
  • 1/2 C chopped shallot
  • 1/3 C white wine
  • 1/4 C olive oil
  • 2 T each white wine vinegar and Dijon mustard
  • salt and pepper to taste
  • 2 C chopped green beans
  • 1 drained can oil-packed tuna
  • 1/2 C halved kalamata olives
  • 2 # boiled fingerling potatoes

Preparation

Step 1



Mix 1 cup chopped mixed parsley, chives and tarragon, 1/2 cup chopped shallot, 1/3 cup white wine, 1/4 cup olive oil, 2 tablespoons each white wine vinegar and dijon mustard, and salt and pepper to taste. Add 2 cups chopped green beans to the potatoes during the last 4 minutes of cooking. Add 1 drained can oil-packed tuna and 1/2 cup halved kalamata olives. Toss with 2 pounds boiled halved fingerlings.
