Cuban Roast Pork with Black Bean Salsa

Ingredients
- Salsa:
- 2 tsp. Lime Zest
- 1 tsp. Olive Oil
- 1 tsp. Cumin
- 1 clove Garlic, minced
- 1 to 1 1/4 lb. Pork Loin
- 1 15 oz. can Black Beans rinsed
- 2 tsp. Lime Juice
- 2 tsp. Olive Oil
- 1/2 cup cooked Frozen Corn
- 1/4 cup chopped Red Bell Pepper
- 1/4 cup chopped Cilantro

Preparation
Step 1
Heat oven to 425 degrees.
In small bowl mix lime zest, oil, cumin and garlic.
Rub mixture on all sides of pork.
Place in shallow roasting pan and roast for 20 minutes or until pork reaches temp of 155 degrees.
Remove from oven, tent with foil and let rest for 5 minutes.
Mix remaining ingredients to make salsa and serve with pork.
