Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons white wine vinegar
  • 2 garlic cloves, minced
  • 1 tablespoon minced fresh thyme
  • 1/2 taspoon salt
  • 1/4 teaspoon pepper
  • 2 large yellow squash, cut into 3/4 inch thick slices
  • 1 large zucchini, cut into 3/4 inch thick slices
  • 1 large green bell pepper, cut into 1 inch squares
  • 1 large yellow bell pepper, cut into 1 inch squares
  • 3/4 pound medium-size fresh mushrooms

Preparation

Step 1

1. Combine first 6 ingredients in a large bowl; stir well. Add squash and remaining ingredients, and toss well. Cover and marinate in refrigerator for 2 hours, tossing occasionally.

2. Drain vegetables, and thread alternately on skewers. Grill, covered with grill lid, over medium coals (300 to 350 degrees) 12 minutes or until tender, turning once.

NOTE: If you're using a gril basket, grill the veggies in 2 batches in a single layer.
