Ingredients
- Brine from 1 can of chickpeas
- 1/2 cup sugar
- Dash of vanilla (optional)
- Pinch of salt (optional)

Preparation
Step 1
Whisk chickpea brine in a bowl until it's fluffy/solid like egg whites would be. Then whisk in ½ cup sugar until stiff peaks form.
When it's meringue consistency, drop in rounds on parchment-lined baking sheet and bake at 250°F for 30 minutes then at 200°F for 1 hour. Let cool in oven for 1-2 hours without opening the oven.
Enjoy alone, or eat with ice cream or whipped topping. Store in an air-tight container for up to 1 week.
Variations: Add other flavorings, food coloring, or use cannellini or kidney bean brine in place of chickpea brine.
