Ingredients

  • 2 15 oz cans black-eyed peas
  • 1/2 large green bell pepper
  • 1/2 cup sweet onion
  • 4 strips of bacon
  • 1 15 oz can diced tomatoes
  • 1 small jalapeno pepper
  • 1 8 oz can tomato sauce
  • 1/2 cup water (approx.)
  • 1 clove garlic-minced
  • salt
  • pepper

Preparation

Step 1

In pan, cook on Medium heat bacon strips until done.
Remove bacon and place on paper towel-lined plate.
Cook onion, peppers, and peas until softened. Approx. 5 minutes.
Stir in garlic, diced tomatoes and sauce.
Break off bacon into small pieces in mixture.
Pour in water just enough to provide a little broth.
Salt and pepper to taste.
Cook until juices cook down a bit and thickens up. (Lower heat slightly if boiling).
