Carrot Salad

Ingredients

  • 3 lbs carrots
  • 1/2 cup cider vinegar
  • 2 tsp salt
  • 2 tbsp chopped flat leaf parsley

Preparation

Step 1

Peel and grate carrots; put in a large bowl. Toss with vinegar and salt, adding more salt to taste. Add parsley and toss to combine. Serve at room temperature.
