Ingredients
- Dressing:
- 1 tablespoon white wine vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon minced garlic
- 1 teaspoon fresh tarragon
- 3 tablespoons olive oil
- Salt and pepper
- Salad:
- 1 small fennel bulb, trimmed, very thinly sliced lengthwise
- 1 cup cherry tomatoes
- 1 cup cooked chicken
- 2 cups mixed greens

Preparation
Step 1
Whisk white wine vinegar, mustard, garlic and fresh tarragon in medium bowl to blend. Gradually whisk in oil. Season with salt and pepper.
In a bowl, toss fennel in a small amount of dressing (enough to coat it). Divide between two Fit & Fresh salad containers, top with tomatoes and chicken and greens, place additional dressing in lid compartments. Voila! Lunch is served!
