Royal Scotch Eggs

These beefed up Scotch Eggs were a hit. The Mister especially appreciated the nod I gave to the restaurant we used to work at.

Ingredients
- 4 hardboiled organic eggs, peeled
- 1 lb. grass fed ground beef
- 4 strips of bacon
- Seasoning of your choice {i.e. garlic, onion, or an organic no-salt seasoning blend}
- Salt
- Organic olive oil

Step 1
Preheat oven to 350° F.
In a medium skillet cook bacon until crisp. When done, remove to drain.
Meanwhile, in a medium bowl, combine grass fed ground beef with seasonings. Mix well and divide mixture into quarters. Form each quarter into a patty of sorts.
Place an egg in the middle of each patty and wrap the meat mixture around the egg. Be sure it is covered completely.
Heat oil in an oven safe large skillet over medium-high heat.
Brown the wrapped eggs on all sides, should take 8-10 minutes.
Transfer to your preheated oven and let cook another 8-12 minutes.
Remove from oven, let cool slightly, slice in half and top with bacon strips using a toothpick.
