  • 1 cup of fine bread crumbs
  • 1 cup milk
  • 2 pounds ground beef
  • 1 cup onion, finely chopped
  • 2 eggs, beaten
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp nutmeg
  • 1/2 cup butter or margarine
  • 1/4 cup flour
  • 3 beef bouillon cubes
  • 3 cups hot water
  • 1 1/2 cups milk
  • 1 1/2 cups light cream

Step 1

Soften bread crumbs in one cup of milk. Add beef, onions, eggs, and seasonings, mix thoroughly and lightly. Shape into small balls about one inch in diameter. Heat butter in large skillet. Brown meat balls, remove, and stir flour into the drippings. Blend well. Dissolve bouillon cubes in hot water. Gradually add to flour mixture, stirring constantly until smooth. Add milk and cream. Cook over low heat, stirring constantly, about three minutes. Add meatballs to sauce. Simmer 10 to 15 minutes, stirring occasionally, until sauce is of consistency desired. Makes 12 generous servings, as main course, or 24 smorgasbord servings.
