Ingredients

  • 2 frying chickens (2 1/2 to 3 pounds) cut into serving pieces
  • 1 cup flour
  • 1 Tbs salt
  • 2 Tbs paprika
  • 1/2 tsp poultry seasoning
  • 1/4 tsp pepper
  • 1/4 cup melted butter
  • 1/4 cup broth or milk
  • fat for frying

Preparation

Step 1

Mix flour and seasonings in a paper bag. Shake chicken pieces well to coat evenly. Place on a rack for a few minutes before frying. Heat enough fat in a heavy skillet to make depth of 1/2 inch. Cook chicken in hot fat until golden brown, 12 to 18 minutes, turning as necessary to brown evenly. Place chicken, one layer deep, in a shallow baking pan. Spoon combined broth and butter over chicken. Cook in moderate 350 degree oven until chicken is tender - 25 to 30 minutes. More broth may be drizzled over chicken if it appears dry.
