  • Round steak, 2 inches thick
  • flour, salt and pepper
  • 1 small can tomatoes
  • 1 onion sliced
  • butter
  • water

Step 1

Lay the steak on a floured board. Flour it and season with salt and pepper. Now with a kitchen mallet pound the flour and seasoning into the steak. Do this thoroughly on both sides. The idea is to break down the tissues as well as to pound in the seasonings. Now brown the steak on both sides in butter. Then add a small amount of tomatoes, just to almost cover the steak. Add sliced onion. Cover and cook over low heat or in 350 degree oven for two hours or more. Cut into serving portions. Perfect swiss can be cut with a fork.
