Pizzettes (Mini Toaster-Oven Pizzas)
- 12 slices Atkins bread - (very thin)
- 3/4 cup controlled-carb tomato sauce
- 1 cup shredded provolone or mozzarella cheese
- 2 tablespoons chopped fresh parsley
- 1 teaspoon dried oregano
Using a 3-inch round cookie cutter, cut discs from each slice of bread (save leftovers to make bread crumbs). Toast lightly in toaster-oven until crisp.
Spread 1 tablespoon sauce onto each pizza, top with a generous tablespoon of shredded cheese. Sprinkle with parsley and oregano.
Bake on broiler tray 23 minutes, until cheese melts.
This recipe yields 12 servings.
