Ingredients

  • FOR THE CRUST:
  • 2 cups flour
  • 1/2 cup powdered sugar
  • 1 cup (8 ounces) unsalted butter, at room temperature
  • Pinch of salt
  • FOR THE FILLING:
  • 4 large eggs
  • Zest of 1 lime
  • 1/3 cup fresh lime juice
  • 1/4 cup all-purpose flour
  • 2 cups granulated sugar
  • 1/2 teaspoon baking powder
  • 3 drops green food coloring (optional)
  • Extra powdered sugar as garnish (About 1/3 cup)

Preparation

Step 1

Preheat oven to 350 degrees. Spray a 9x13 pan with non-stick cooking spray.
Make the crust:

Mix together the flour, sugar, butter, and salt until it forms a very lose dough, much like a pie crust, and pat it into a 9x13 pan.

Bake for 20-25 minutes until just lightly browned.
Make the filling:

Beat together the eggs, lime zest, lime juice, flour, sugar, and baking powder. If desired, add green food coloring to get a richer green color.

Pour it over cooked crust, and bake for 25 minutes. Remove from oven, and let cool 5 minutes. Sprinkle with powdered sugar, let cool completely and cut into squares.
