Ingredients
- 2 1/2 cups water
- 1 cup uncooked long-grain rice
- 1/2 cup chopped dried pineapple
- 2 teaspoons butter
- 1/2 teaspoon grated lime rind
- 1/4 teaspoon salt
- 1/4 cup chopped fresh cilantro
- 1 tablespoon chopped green onions
- 2 1/2 tablespoons fresh lime juice

Preparation
Step 1
1. Bring 2 1/2 cups water to a boil in a medium saucepan; add rice and next 4 ingredients (rice through salt). Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed.
2. Remove from heat; stir in cilantro, onions, and juice.
Really good! Made as part of a Cinco de Mayo dinner and it was a nice contrast. Not a wow, but really very good.
