Lucky Charms Ice Cream Bars

Good Morning! I’m Emily from Layers of Happiness – food blog where I share easy, drool-worthy recipes with my mom. I’m so happy to be here with you this morning to share one of our family’s new favorite recipes. Lucky Charms Ice Cream Bars. These are such a fun spin off a ice cream sandwiches but let me assure you… they’re so much more yummy and magical!

Ingredients

• 2 pints vanilla Ice Cream
• 2 cups Lucky Charms cereal (or more depending on preference)
• 16 graham crackers, crushed
• Caramel and Hot Fudge Topping (optional)

Preparation

Step 1

Line an 8x8-inch baking pan with parchment paper or foil.
Spread half the crushed graham crackers on the bottom of the pan. Add the ice cream mixture and spread out until smooth and even thickness. Sprinkle the remaining graham crackers on top of ice cream and lightly press into ice cream. Top with hot fudge and caramel, if desired.
Place in freezer for at least 2 hours, until ice cream is firm. Cut into 9 squares and serve immediately or place back in freezer for later.
