  • Cola Spice:
  • 20 ea Whole Allspice
  • 1 ea Star Anise
  • 12 ea Black Peppercorns
  • 1 tsp. Cocoa Nibs
  • 1/8 tsp. Sea Salt
  • 2 tbsp Brown Sugar
  • 1 ea Vanilla Bean
  • ½ tsp Ground Cinnamon
  • 5 ea Whole Cloves
  • Cola Spiced Whiskey Cake:
  • 500 g Butter
  • 460 g Sugar
  • 400 g Eggs
  • 335 g Cake Flour
  • 5 g Salt
  • 10 g Baking Powder
  • 2 tbsp Cola Spice
  • Whiskey Soaking Syrup:
  • 10 oz Water
  • 8 oz Sugar
  • 6 oz George Dickel’s Tennessee Whiskey
  • 2 oz Butter
  • Coca Cola Fluid Gel:
  • 24 oz Coca Cola
  • ½ tsp Salt
  • 2 oz Brown Sugar
  • 2 g Citric Acid
  • 8 g Agar Agar
  • 2 g Xantham Gum
  • Coke Sorbet:
  • 1 lb Simple Syrup
  • 1 can Coke
  • 1 tbsp. Whiskey
  • Dickel’s Tennessee Gelee:
  • 10 oz Water
  • 8 oz Sugar
  • 6 oz Dickel’s Whiskey
  • 16 g Silver sheet gelatin, bloomed

Preparation

Step 1

Cola Spice:
1. Blend in spice grinder until smooth.
Cola Spiced Whiskey Cake:
1. Cream butter and sugar for 8 minutes and blend in eggs. Sift together dry ingredients and mix in.
2. Bake at 350 F for 15 minutes or until toothpick can be removed cleanly when inserted.
3. Soak cake with syrup upon removal from oven.
Coca Cola Fluid Gel:
1. Heat Coke with all ingredients to a simmer. Pour into a pan to cool. Blend set gel in a blender. Vacuum gel to remove air.
Coke Sorbet:
1. Mix together and freeze in an ice cream machine.
Dickel’s Tennessee Gelee:
1. Boil sugar and water and dissolve bloomed gelatin in.
2. Stir in whiskey and pour into a pan to cool and set. Once set cut into cubes.
