Ingredients

  • 3 pounds boneless, skinless chicken breast, cubed
  • 1 egg, beaten
  • 3/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon light soy sauce
  • dash white pepper
  • 1/2 tablespoon Chinese cooking wine
  • 1 1/2 tablespoons water
  • 1 cup cornstarch
  • LEMON SAUCE
  • 4 tablespoons lemon juice
  • 9 tablespoons water
  • 1/4 teaspoon salt
  • 3 tablespoons sugar, heaping
  • 1/2 tablespoon vinegar
  • dash sesame oil
  • 1 teaspoon cornstarch
  • 6 tablespoons vegetable oil, for frying chicken

Preparation

Step 1

Combine chicken with first 7 ingredients and let stand 15 minutes.

Heat oil in frying pan.

Dredge chicken in cornstarch and fry in oil until crunchy, brown and cooked.

Prepare lemon sauce in a small saucepan and heat until thickened. Serve with cooked chicken.
