Ingredients
- 3 pounds boneless, skinless chicken breast, cubed
- 1 egg, beaten
- 3/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 teaspoon light soy sauce
- dash white pepper
- 1/2 tablespoon Chinese cooking wine
- 1 1/2 tablespoons water
- 1 cup cornstarch
- LEMON SAUCE
- 4 tablespoons lemon juice
- 9 tablespoons water
- 1/4 teaspoon salt
- 3 tablespoons sugar, heaping
- 1/2 tablespoon vinegar
- dash sesame oil
- 1 teaspoon cornstarch
- 6 tablespoons vegetable oil, for frying chicken

Preparation
Step 1
Combine chicken with first 7 ingredients and let stand 15 minutes.
Heat oil in frying pan.
Dredge chicken in cornstarch and fry in oil until crunchy, brown and cooked.
Prepare lemon sauce in a small saucepan and heat until thickened. Serve with cooked chicken.
