Ingredients

  • 1 pound sirloin steak, trimmed, cut into matchstick pieces
  • 1/4 teaspoon baking soda
  • 1/2 cup water
  • SEASONING
  • 2 teaspoons light soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon cornstarch
  • dash white pepper
  • COATING
  • 2 eggs
  • 3 tablespoons cornstarch
  • 1 cup fine dry breadcrumbs
  • SAUCE
  • 1 small carrot, julienned
  • 2 ounces ginger, shredded
  • 1/2 green pepper, julienned
  • 1/2 cup water
  • 1/2 cup sugar
  • 2 tablespoons light soy sauce
  • 2 tablespoons dark soy sauce
  • dash Woh Hup (hot chili oil), optional
  • 1/2 teaspoon salt
  • 2 teaspoons cornstarch
  • 2 tablespoons water

Preparation

Step 1

Cover beef with water and baking soda and let stand for 15 minutes. Drain

Add seasoning to beef and stir.

Mix cornstarch and breadcrumbs, place in a bowl. Place beaten egg in another bowl.

Dip beef pieces in egg and then in the breadcrumb mixture. Deep fry in oil. (Watch carefully, breadcrumbs burn easily.)

Mix sauce ingredients except for vegetables, cornstarch and water. Mix the cornstarch and water in a separate bowl.

Heat oil in wok. Add ginger, carrot and green peppers. Saute. Add sauce ingredients and cook until hot. Add cornstarch and let boil. For hot ginger beef add Woh Hup Sauce.

Put deep fried beef on a platter and pour sauce over.
