Ingredients

  • 2 tablespoons butter, softened
  • 2 tablespoons neufchatel cheese, softened
  • 1 cup sugar
  • 1 large egg
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 cup banana, mashed
  • 1/2 cup skim milk
  • 2 tablespoons dark rum
  • 1/2 teaspoon lime zest
  • 2 teaspoons lime juice
  • 1 teaspoon vanilla
  • 1/4 cup pecan, toasted and chopped
  • 1/4 cup coconut
  • 1/4 cup brown sugar
  • 2 teaspoons butter
  • 2 teaspoons lime juice
  • 2 teaspoons dark rum
  • 2 tablespoons pecan, chopped and toasted
  • 2 tablespoons coconut

Preparation

Step 1

1. Preheat oven to 375. Beat bugger. Add sugar. Beat in egg.

2. Combine flour, bp, soda, and salt. Combine banana, milk, rum, lime and vanilla. Add flour and banana alternately to sugar, beginning and ending with flour. Add nuts and coconut.

3. Pour into sprayed loaf pan. Bake 1 hour. cool in pan 10 minutes, then on rack out of pan.

4. Mix sugar, butter, lime, and run. Simmer and cook 1 minute. Take off heat. Add nuts and coconut. Spoon over loaf.
