Ingredients

  • 2 cups flour
  • 3/4 cup sugar
  • 1 Tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 6 Tbsp unsalted butter, melted
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1 1/4 cups sour cream
  • 1/3 cup jam (1/3 to 1/2)

Preparation

Step 1

1. Stir together the flour, sugar, baking powder baking soda and salt.

2. In another bowl, whisk together the melted butter, eggs, vanilla and almond extracts, and sour cream until smooth. Add the egg mixture to the dry ingredients and stir until just evenly moistened (the batter will be slightly lumpy).

3. Spoon the batter into each muffin cup, filling 1/3 full. Drop a heaping teaspoon of jam into the center, then cover with batter level to the rim of the cup. Bake at 375 for 20 to 25 minutes.

These were excellent. Wonderful texture and just delicious. Cut butter down to 3 tbsp and added 3 tbsp buttermilk. Definite repeaters.
