Ingredients

  • 2 cups flour
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground cinnamon
  • 1 1/2 teaspoons baking powder
  • 3/4 cup vegetable or corn oil
  • 1 1/4 cups sugar
  • 3/4 cups warm water
  • 1/4 cup orange juice
  • Grated rind of 1/2 orange
  • 1 Granny Smith Apple, peeled, cored, sliced thin and chopped into 1-inch pieces
  • 1 cup dried figs, chopped into 1/2-inch pieces or smaller
  • 1/2 cup rough chopped walnuts, plus more for topping

Preparation

Step 1

Combine flour, spices and baking powder in a small bowl and whisk to combine. Set aside.
Combine oil and sugar in stand mixer or with hand mixer.
Add warm water, orange juice and orange rind.
Mix until well blended.
Slowly add the dry ingredients and mix until smooth.
Gently mix in the apples, figs and walnuts.
Line muffin pan with paper cupcake liners.
Using an ice cream scooper fill the cups 3/4 full.
Top with chopped walnuts.
Bake at 350 degrees for 15-18 minutes or until the tops are lightly browned and the cake springs back when touched.
Enjoy warm with butter (or non-dairy vegan butter) and honey. Yum. Yum.
