Ingredients

  • 4 ounces cashews, dry-roasted cashews
  • 8 ounces skinless boneless chicken breast, cubed
  • 1 carrot, cubed
  • 1/2 green pepper, diced
  • 1/2 red pepper, diced
  • 4 large mushrooms, diced
  • 2 green onions, diced
  • 1 clove garlic, minced
  • MARINADE FOR CHICKEN
  • 1 egg white
  • 1/4 teaspoon salt
  • 1/4 teaspoon sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon chinese cooking wine
  • dash sesame oil
  • dash white pepper
  • SAUCE
  • 1/4 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/2 teaspoon cornstarch
  • dash sesame oil
  • dash pepper
  • 2 tablespoons water

Preparation

Step 1

Marinate chicken for 15 minutes while cutting vegetables.

Fry chicken in oil until cooked and remove from pan. Add 2 tablespoons oil and stir fry all veggies except green onions. Add 1/4 tsp. salt, 1/4 tsp. sugar. Cook for 3 minutes. Remove from pan.

Add 1 tablespoon oil to frying pan, add green onion and garlic, stir. Add chicken and veggies. Add 1/2 of the sauce. Stir to coat.

Add sesame oil and cashews.
